A good Victoria Sandwich is the perfect everyday cake. We often make one for our tea and cake meetings here at Building Workshop. For a bit of a change, you can use chocolate icing instead of raspberry jam and icing sugar, or add the grated zest of a lemon to the mixture and simply dust with icing sugar, or divide the mixture into cupcake cases and ice with coloured icing.
